It’s all about the colour, height and texture, Scottish independent school catering managers learned at the recent Food Forum Live at Edinburgh Academy.
Those were among the hints and tips Independents by Sodexo executive development chef Tom Allen imparted as the transformation of school servery counters moved north of the border.
There are now eight Scottish schools under Independents by Sodexo after having previously been managed by a different part of Sodexo.
Edinburgh Academy itself has already been through its makeover and catering manager David Black, who has worked there for 25 years, couldn’t be more pleased with the outcome. “I’m all for it,” he said. “It’s moving the food to another level”.
Edinburgh Academy will continue to be an innovation hub for others to visit and observe.
