An Independents by Sodexo dominated team of chefs won a 120 meal ‘battle’ with its main contract catering rival at national culinary show Hotelympia.
A superb team effort, led by Independents by Sodexo food development director Tom Allen as captain, saw Sodexo earn bragging rights over its main rival in La Parade des Chefs.
The Sodexo team won the silver best in class award in the three course lunch at London’s ExCel Arena as they wowed restaurant diners with their rabbit starter, pan-fried halibut main course and bitter chocolate torte dessert.
In addition to Tom, the team comprised of three other Independents by Sodexo Chefs: development chef Steve Wylie, Wycombe Abbey sous chef Louisa May-Matthews and Reed’s School pastry chef Andy Voice. They were joined by Tom Beauchamp, a senior Scottish-based chef with Sodexo’s sports and leisure business Prestige, and Mark Weatherill who works for Sodexo Corporate Services as a development chef.
The advanced background organisation fell to executive development chef Robin Turner and the logistics on the day were managed by Will Dixon MBE, who runs Independents by Sodexo’s contract at Bedford School.
