Food Development Director

My responsibilities as food development director for Independents by Sodexo are to build on the reputation Sodexo has created in the independent education sector and reinforce the company’s passion for delivering the highest quality food service with innovation and creativity at its core.

I was appointed in January 2013 having previously worked for Historic Royal Palaces as executive chef, where I oversaw the introduction of a Best of British theme across all the sites, and before that the O2 Arena, where I was responsible for over 80 chefs.

I believe that the best training for chefs is to see first-hand where the food they are using originates so I ensure our chefs get the opportunity to visit suppliers regularly. I am passionate about using the best ingredients available to create unique, seasonal menus that get children excited about food.

I have also established a network of innovation hubs at a number of schools which provide chefs with the opportunity to visit and learn in an environment similar to that in which they work. The hubs cover kitchen practice as well as presentation and display and help to bring to life the standards which each school is striving to achieve.
