A culinary journey across the US – Darren Edwards reflects on his Global Chef experience

Usually found at Wellington College, a Sodexo client for more than 60 years, ex-RAF reservist Darren Edwards is the school’s Executive Head Chef and leads a 190-strong catering team. With over 35 years in hospitality and 25 years of military service, Darren brings a unique blend of discipline, leadership and culinary passion to his role. His experience serving on operational tours has shaped his approach to teamwork, precision and resilience – qualities that now underpin the delivery of 6,500 breakfasts, 8,750 lunches and 6,000 suppers each week.

Darren joined Sodexo in September 2018, drawn by the opportunity to work within Independent schools and to benefit from the support network provided by part of a larger organisation.

With over 35 years of experience in the hospitality industry, he is a well-respected figure in British culinary circles. A member of the British Culinary Federation (BCF) and a committee member for the past four years, his career began in 1985 in classical kitchens across the Midlands, including the prestigious Terrace Restaurant at the NEC. Alongside his civilian career, Darren served as an RAF Reservist from 1998 to 2023, completing four operational tours and even serving aboard HMS Illustrious.

His passion for culinary excellence has seen him compete in numerous competitions, including nine consecutive years at the TUCO Chefs’ Challenge, winning the team event in 2015. He’s also judged Sodexo culinary competitions across prep schools and universities, and was honoured with the BCF’s Contract Caterer Chef of the Year Award in 2023.

That’s why, never one to shy away from a new challenge, Darren took his talents across the Atlantic this spring, after being asked to participate in the Sodexo Global Chef Spring 2025 Tour. Representing the UK in Group 3 of the programme, Darren was selected based on his experience and commitment to culinary excellence, and his involvement in competitions and judging events.

Darren spent four weeks traveling across the United States, bringing British culinary flair to university campuses and creating unforgettable experiences for university students and employees alike.

The Global Chef programme is more than a culinary showcase: it’s a cultural exchange. Darren embraced this wholeheartedly, arriving in Dorchester, Massachusetts, in late February to begin his journey at the University of Massachusetts Amherst. After a few days of training and preparation he hit the road, visiting seven universities across six states, including Minnesota State University, West Virginia University, and the University of Vermont.

At each stop, Darren hosted two-day culinary events, preparing authentic British dishes and engaging with students through live cooking demonstrations and storytelling. His events were immersive experiences, with Darren bringing music, cultural décor, and traditional attire to each location, offering a taste of the UK in every sense.

Behind the scenes, Darren’s schedule was intense. With travel days, prep time, and back-to-back events, the tour demanded stamina, flexibility, and a deep passion for food and people. Yet, Darren’s energy never wavered. His enthusiasm and professionalism left a lasting impression on every campus he visited.

Reflecting on the experience, Darren shared how meaningful it was to represent his country and Sodexo on a global stage: “I became involved in the Global Chef programme through Sodexo’s internal networks and my passion for sharing culinary expertise, with my experience helping me to stand out as a candidate.

“I was honoured to be selected to represent the UK and showcase the skills and creativity we have within our teams. It was great to travel and I really enjoyed meeting the other two chefs from the Global Team – Germany and Brazil – as well as cooking alongside many different American chefs.

“You never stop learning in a kitchen, and it was fascinating to see the variety of styles and to learn some of their unique skills and the different processes in other countries.”

Following the conclusion of the Global Chef tour, Darren’s impact continues to resonate. His journey is a testament to the power of food to connect people across cultures, and a proud moment for Sodexo’s global community.
